GBM was a show I grew up watching so I loved the opportunity to work on something that inspired me to cook. If you’ve seen the show you’ll understand the incredible complexity and detail that the chefs go into to create their dishes and making sense of everything was a challenge I enjoyed
It was great to see and work with the next generation of chefs that we’ll no doubt be seeing more of in the future. Stand out talent this year for me included Tommy Banks of The Black Swan in Oldstead and Mark Abbott of Daniel Clifford‘s Midsummer House in Cambridge among others.
The finale of this series was a banquet held in the House of Commons Member’s Dining Room at the historic Palace of Westminster, an amazing location to work in. The banquet itself also gave me the opportunity dust off my overalls and assist my friend Lizzie Chambers with the art direction of the dining room
